Vegan Dinner Ideas

It’s the end of the day, you are on your way home from an exciting day at work and your mind turns towards dinner. The good news for my fellow veganites is that there is a whole world of ingredients out there to explore and dinner time can me one of the most exciting meals of the day. In this article, I want to explore some of my favorite vegan dinner ideas including some which just take minutes to pull together after a hard day at work.

What does being Vegan mean?

For those of you who don’t know a vegan diet means no animal products whatsoever, this includes eggs and dairy products. However, cutting these items out of your diet does not limit your dinner time options, in fact, it does just the opposite.

Let’s start with one healthy vegan dinner recipe that is easy to make – Potato Roti Curry. Roti is a traditional whole-wheat flatbread that is great for sopping up liquids or can even be eaten on its own. I remember when I was in Thailand a few years ago the whole country was mad for glazed roti and you could find this delicious snack almost everywhere you went. This dish is a Caribbean style curry incorporating sweet Calabaza squash, bell peppers, turmeric, and potatoes. It is mild but you can punch it up with some chili peppers, and it works great either as a soup or slightly thicker as a stew.

Another great vegan dinner idea is this 15-Minute Creamy Tomato Soup, it is simple and easy to make and I often cook up a big batch to have ready to go at any time. To make this tasty recipe you will two cans of tomato paste though I prefer to use tomatoes from my garden, oregano, red pepper flakes, and I prefer to use rice powder over bread as the thickener.

If you are looking for truly inventive vegan recipes for dinner, try this Spice Cauliflower Couscous from Love & Lemons. This dish includes cauliflower, hazelnuts, pine nuts, dried orange peel, cilantro, red chilli, and chickpeas. You can use coconut milk or almond milk as well as turmeric and cinnamon to make the sauce. This is a light dish that takes about 20 minutes to prepare and tastes just as good for lunch as it does for dinner.

From my friends at Vega-licious comes this no-fuss, yeast free vegan pizza. This healthy recipe takes about 25 minutes to make and it is a great option for vegan moms as you can constantly mix up the toppings. If you are really adventurous you can make your own crust, but the quick and easy option for the work week is to use whole wheat tortilla shells. Another trick is to cook this up in a skillet, but I prefer to use the oven as I can focus on other things while the pizza is cooking.

Are you looking for a romantic dinner option, then check out this Layered Raw Taco Salad for Two, this vegan dinner idea is great for any intimate meal and you can even share the same bowl which makes it all the more romantic. Another great thing about this salad is its flexibility and this really allows you to break out of the dreaded ‘salad rut’. Feel free to add greens, guacamole, andsalsa to you hearts content. Then you can mix it up with the recommended minced almonds, or you can reach out for seitan or even my favorite – tempeh.

This pesto and ricotta recipe combines Portobello mushrooms, red onions, garlic, and arugula for a hearty and healthy vegan dinner option that will power you back up. I normally prepare these the night before, this way I can come back from my ride and cook them right up.
