Breakfast is such an important meal. During the night, our brain activity decreases, muscles relax, blood sugar drops and our heart slows to allow our bodies to rest. A well-balanced breakfast delivers sugar and protein to the brain and muscles, waking them up and preparing them for work. Studies consistently show that eating breakfast improves endurance, concentration and the ability to solve problems.
Now, if you are vegan like I am, you might be wondering what options you have for breakfast. We have conscientiously chosen to not eat bacon and eggs or pour milk on a bowl of sugar coated cereal, so what is on the menu for a vegan breakfast? The internet offers a myriad of answers to this question, but I would like to share with you four vegan breakfast recipes that have served me well.

- Tofu Scramble – This simple recipe can easily be modified to please your own taste buds. You start with roughly a cup of solid tofu and gently press it to remove excess liquid. Cut it into cubes and sprinkle it generously with your favourite seasoned salt before setting it aside. The next step is to grease a skillet and stir fry onion, peppers and mushrooms. When your onions and peppers are almost limp, add the tofu to the skillet and continue stir frying until it is lightly browned. Wrapped in a whole wheat tortilla or served with toast, this tofu scramble makes a hearty breakfast and is one of the best vegan breakfast ideas for a day full of strenuous activity.
- Overnight Oats – Quick to make in the evening and ready to grab in the morning, overnight oats are the perfect protein and fiber filled breakfast for a busy day. The basic recipe is to mix ½ cup of rolled oats with ½ to ¾ cup dairy-free milk, sweeten to taste and refrigerate overnight. By morning the oats will have absorbed all the milk and be ready to eat. I might warn you that this basic recipe is rather bland, and most people enjoy dressing it up with fresh fruit, chopped nuts, a sprinkle of cinnamon, a tablespoon of fruit preserves or even a dollop of peanut butter.
- Vegan Yoghurt – Although I understand the importance of breakfast, there are some days when I don’t feel like eating early in the day. On these days, I opt for a bowl of fruit and yoghurt – yes, vegan yoghurt! Even the most common fruits provide my body with a wealth of vitamins, natural sugars and fiber and tossing in a few berries and nuts will add anti-oxidants and amino acids to the mix. The yoghurt, which can be made from soy, almond or coconut milk, delivers flavour and a healthy dose of probiotics. There are a variety of commercially made vegan yoghurts available on the market and it is also possible to make your own. The easiest recipe I have found so far is simply called Easy Homemade Vegan Yogurt .
- Smoothie – Of all my vegan breakfast recipes this is probably the one I use most often, because I can incorporate leftovers into it and it is practical to drink during my commute to work. Begin with approximately 8oz. of dairy-free milk and blend in one or two types of fruit. Bananas and strawberries make a delicious combination, but feel free to mix and match what you have on hand. Next I add two tablespoons of grain. Depending on the day, the grain might be uncooked oats, cooked quinoa from last night’s dinner or even some brown rice. It is also possible to added a small amount of leftover beans or cooked vegetables, which boost the nutritional content while affecting the taste very little. Lastly I sweeten my unique smoothie with agave nectar and it is ready to drink on the run.
