Let’s face it we are all busy these days. Balancing the pressures of work, family, and personal life is a lot and it is even harder when we are constantly bombarded by the temptations of prepackaged, processed foods. However, being vegan and eating healthy does not mean you need to move into your kitchen and I wanted to give you the insider’s perspective on a number of easy vegan recipes. My goal is to introduce you to simple vegan recipes which you can prepare by yourself, or with your kids.
Easy and Delicious...
First up, this Blueberry-Flax Granola is a great snack option; I use them to help me power up during my rides and this quick and easy vegan recipe can be a wonderful excuse to bond with your kids. The best thing about granola is you can use it with just about anything. There really are no rules! Though you need to make sure you don’t eat all of the blueberries while making the bars – I can’t keep my hands off them. I would recommend you follow the recipe and intentionally undercook the granola. This will leave the bars slightly chewy; it also means that don’t disintegrate when I take them out for my bike rides. Use the basic recipe and then mix it up by adding ingredients you like. This is truly an easy vegan recipe that takes 10 minutes to prep and then about 25 to 30 minutes to bake.

If you are a regular reader, you know that one of the things I love about the vegan way of life is the adventure, and here is a great recipe to make with the whole family. This super simple vegan recipes for Crispy Baked Potatoes with Spring Onions takes about 20 minutes to prep and then you pop them in the oven for two hours until they are golden brown. The entire house will smell great and the kids will brim with excitement as they wait for them to finish. While the original recipe called for soured cream, I substitute coconut milk but you can also use soy yogurt or vegan sour cream depending on your preference.
Super Easy Vegan Sandwiches
Another easy vegan recipe that you can make with the kids are these Green Club Sandwiches, I love this one as I can use the vegetables from my back garden – there is nothing tastier than the produce that I grow myself. This simple vegan recipe calls for rocket, avocado, tomatoes, and your choice of vegan bread. Mix it up a bit by using pita or tortilla and make it a wrap. This is a super simple option for lunch or even a picnic in the park.
Fat free but still so easy!
This easy vegan meal in a bowl comes from Vega-licious and is simple to make. Hearty and delicious, the Fat-Free Vegan Borscht takes about 10 minutes to prep and if you are pressed for time, you can always cook up a big batch and then reheat it on the fly. Just remember to drop the ‘T’ as Elena from Vega-licous points out. All you need to make this recipe are potatoes, carrots, cabbage, peppers, beets, and tomato sauce.
As you know, I love tempeh and here are a couple of my favorites, yet easy to make tempeh recipes. First up is Teriyaki Tempeh, this recipe takes about 10 minutes to prepare and goes great with Japanese rice. All you need is about eight ounces of tempeh, brown sugar, soy, rice vinegar and chili. This dish is simple to make and is full of protein.
Another delicious, yet easy to make tempeh recipe comes from Jamie Oliver and is a mix of Asian and Latin American influences. This recipe for Tempeh Fajitas with Avocado Lime Salsa is a can’t miss dish. It takes about 20 minutes to prepare and all you need is some tempeh, onions, garlic, red peppers, cumin, chili powder, avocados, and tomatoes - again from my own garden. This fajita recipe is like sampling all of the cuisines of the United Nations in one bite and is a regular feature at my house.
